GREEK: Spaghetti Neoplitan

Green Peppers x 2
Bacon (Unsalted/Non smoked) x 12 slices
Mushrooms x 1 punnet
Hot Dog Sausages (or alternative sausage) x 8 sausages
Pasta (spaghetti) x 4 servings
Eggs x 2
Grated Cheese (low salt) x as little/much as you want
Cayenne Pepper x 2 teaspoons
Plain Flour x 2 tblspoons
Marg x 2 tblspoons
Milk x 1 pint max.


Slice Bacon & Sausages & add to hot pan with a touch of olive oil. Add 2 teaspoons of Cayenne pepper & stir well.
Slice Peppers & Mushrooms & add to the meats. Low simmer for 15 mins or till Peppers soften.
Boil Pasta. Once boiled drain all water & turn hob heat off. Return pan to hob & crack 2 eggs into pasta stir so that the egg binds to the pasta.
Add Frying Pan contents to pasta & stir well.
Leave to stand.
Make a white cheese sauce. Add 2 spoons of marg to saucepan & melt then add 2 spoons of flour & mix to a paste. Add 1/2 to 3/4 pint of milk to the paste constantly stirring till a white creamy sauce develops. Add grated cheese & melt in for a further 2 mins.
Move contents of Meat & Veg with pasta to large oven pan & drizzle with Cheese sauce. Lay additional cheese over the top & cook in oven for 20 mins on a mid to high heat.
Leave to stand for 2 mins before serving.
Serve with side salad & salad dressing or other favourite side dish :)

The "Neoplitan" name is due to the Reds of the Bacon/Sausage with the Green of the peppers mixed with the Whites of the Mushrooms Pasta & Sauce.
(I'm not Greek...just love Greek/Mediteranean foods)

Interesting, I have never heard of this, is it your creation or from a recipe book?  I shall have to test it out?  My lads like sausages.

I have Greek family friends in Athens & in Crete that I have known for the last 40 years. Their mother cooks it :)
